I'm not a lawyer, but I believe when there's litigation between two (or three parties in this case), one side can ask the other to make available their entire correspondence in the matter. I had a similar experience commercially a few years ago.
Presumably the only way Palace could have sight of the letter would be to bring Forest in as a party to the litigation. Complete guess but I'd say they feel the letter had a material influence on the decision and the only way it becomes available is to bring Forest in on the case.
