That depends on whether they were good performances or bad ones, while a player with a single good performance will obviously have a good rating, a player with a single bad performance will have a bad one, so it doesn't really favor or disfavor the single appearance player, besides, how many players play just a handful of games?
You give an example, but in that scenario you look at his individual file:
& that shows you that one game was atypical, so the site remains accurate, even for a player who might only play a handful of times for us & as for not telling everything, I think over 200 raw statistics is about as close to "everything" as most of us are going to get, I mean that gives you not only goals, & assists, but shots per game, pass accuracy, number of passes, type of passes, tackles,interceptions, fouls, off-sides, clearances, dribbles, blocks, own goals, fouls, fouls against you, key passes, how often you're disposed, how many unforced errors you commit, crosses, long balls, through balls, etc., etc.,
You won't get a more comprehensive picture.
